- 4 Croissants
- 2 Granny Smith apples, cut into small cubes
- 15 g unsalted butter
- 100 g white sugar
- 70 g unsalted butter
- 90 g brown sugar
- 35 ml cream, 35% fat
- 1 teaspoon vanilla extract
- 135 g white sugar
- 2 teaspoons cinnamon powder
Preparation steps
- Caramelise 100 g of white sugar over a high heat. Add 15 g of butter and the apples. Cook them until they are slightly soft and set aside to cool.
- In a saucepan, mix together the butter, the brown sugar, the cream, a pinch of salt and the vanilla.
- Place over a medium heat and whisk until the butter has melted.
- Mix together the 135 g of white sugar and the cinnamon.
- Cut the slightly defrosted croissants into large pieces and mix them in with the sugar and cinnamon mixture.
- Place 1 to 2 spoonfuls of apples in the base of the tin.
- Add the croissant pieces and pour over the sauce.
- Cook at 345°F for around 25-28 min. (low ventilation)
- Leave to cool completely before removing from the tin.
- Re-heat just before serving.

You can accompany this dessert with ice cream, a light custard, whipped cream or a caramel sauce.
