  • 4 Croissants
  • 2 Granny Smith apples, cut into small cubes
  • 15 g unsalted butter
  • 100 g white sugar
  • 70 g unsalted butter
  • 90 g brown sugar
  • 35 ml cream, 35% fat
  • 1 teaspoon vanilla extract
  • 135 g white sugar
  • 2 teaspoons cinnamon powder

  • Caramelise 100 g of white sugar over a high heat. Add 15 g of butter and the apples. Cook them until they are slightly soft and set aside to cool. 
  • In a saucepan, mix together the butter, the brown sugar, the cream, a pinch of salt and the vanilla. 
  • Place over a medium heat and whisk until the butter has melted.
  • Mix together the 135 g of white sugar and the cinnamon. 
  • Cut the slightly defrosted croissants into large pieces and mix them in with the sugar and cinnamon mixture.
  • Place 1 to 2 spoonfuls of apples in the base of the tin. 
  • Add the croissant pieces and pour over the sauce. 
  • Cook at 345°F for around 25-28 min. (low ventilation) 
  • Leave to cool completely before removing from the tin.
  • Re-heat just before serving.
